Inspiration

Like a South American salsa, this condiment with tomato, chilies, onion, cilantro, garlic, oil, and vinegar goes great with everything!

Ingredients

  • 2 cups diced tomatoes
  • 4 cloves garlic, minced or pressed
  • 2 scallions (all of the white, 1” of the green)
  • ½ a white onion
  • 4 chilies, diced (any assortment tailored to your personal heat tolerance; we used jalapenos and serranos)
  • ¼ cups olive oil
  • 2 tbsp red wine vinegar
  • ½ cup chopped cilantro
  • Salt and pepper to taste

Preparations

  1. Mix all ingredients in a bowl.
  2. I recommend chilling before serving.

Tips

  • This is best made ahead so the flavors can develop.
  • Lasts in the fridge for up to 3 days (but it won’t last that long 🙂).
