HEALTH BENEFITS OF CHIMICHURRI:

  • Parsley is high in vitamin C and also gives you calcium, iron, vitamin A and carotenes.
  • Garlic has many heart healthy benefits including reducing your blood pressure and improving your cholesterol levels, lowering the risk of heart disease. It also prevents atherosclerosis, hardening of the arteries, which is the most common cause of heart attack and stroke.
  • Chilis are also a good source of vitamin A and beta-carotene.

Ingredients

  • 1 bunch fresh flat parsley, stems removed
  • 1 bunch fresh cilantro, stems removed
  • 1 bunch fresh oregano, leaves removed (~ ½ cup)
  • ½ bulb of garlic, cloves separated, peeled
  • ¾ cup olive oil
  • ½ cup red wine vinegar
  • ¼ cup water
  • 2-3 shallots, peeled
  • 2 cipollini onion, pelled
  • 1 hot chili pepper, stem removed
  • 1 tsp kosher salt

GET CREATIVE
This is an incredibly versatile condiment, so get creative with your ingredients and uses. Most chimichurri recipes don’t ask for cipollini onions and shallots, but I love the extra layer of umami they bring to the condiment.

Preparations

  1. Place all ingredients into a blender or a food processor and blend until smooth. Consistency is key – all of the ingredients should be blended together, but not pureed.

Tips

  • Don’t have red wine vinegar, try using champagne vinegar instead.
  • Missing one of these herbs? Try basil, lemongrass or mint!
  • Store sealed in the fridge for up to 3-4 days.
