Roasted Butternut Squash with Ras El Hanout and Manuka Honey with Preserved Lemon, Mint and Pistachio Yogurt

Inspiration

Now that the cold weather is here, it’s time for comforting, warm dishes. Here is a real winner – roasted butternut squash is complemented by earthy flavors, and nicely countered by the sweetness and tartness of the cool and intriguing yogurt.

Butternut Squash

Ingredients

  • 1 butternut squash, halved, seeds removed, and pierced liberally with a fork
  • Olive or walnut oil
  • Ras El Hanout seasoning mix (see below)
  • Manuka honey

Preparations

  1. Preheat oven to 400° degrees
  2. Spread oil on squash
  3. Sprinkle with liberal amount of Ras El Hanout (see below for ingredients)
  4. Glaze with Manuka honey
  5. Place in oven for approximately 30 mins

Yogurt Sauce

Ingredients

  • 1 cup of low fat Greek yogurt or Skyr
  • Freshly chopped mint
  • 1 preserved lemon, freshly diced
  • Chopped pistachios
  • Olive, walnut oil or other finishing oil
  • Finishing salt

Preparations

This yogurt accompaniment is very forgiving. Pick and choose the ingredients you wish to include, as well as the quantity for each.

  1. Combine mint, preserved lemons and pistachios with yogurt and fold in ingredients
  2. Drizzle with oil, and salt to taste

Plant-Based Substitute

Replace the yogurt with a vegan friendly alternative made with plant-based milks like coconut milk, oat milk, almond milk, cashew milk or soy milk.
