Inspiration

As the weather cools, few things hit the spot like a warm, hearty soup. Made with seasonal vegetables and coconut milk, this satisfying meal is perfect, especially with a little heat 🔥🔥🔥.

PERFECT PARSNIPS AND RUTABAGA:
Parsnips and rutabagas are nutrient-dense root vegetables packed with vitamins, minerals, and dietary fiber that support overall health. Key health benefits include improved digestion, boosted immunity, heart health support, regulated blood sugar, and weight management.

Ingredients

  • 2 cups rutabaga, peeled, cubed (¾“)
  • 2 cups parsnip, peeled, cubed (¾“)
  • 2 carrots, diced
  • 1 onion, quartered
  • 1 ½ cups coconut milk *I like using light coconut milk as a healthier alternative.
  • 6 cups low-sodium vegetable stock
  • 2 heaping cups chopped raw kale
  • 3 tablespoons olive oil
  • Sea salt
  • Freshly ground black pepper
  • Garnishes: Up to you!

TOP AS YOU LIKE:
You can use anything you like. I like to add some heat with diced jalapeño peppers and dried Aleppo peppers, but there’s no right or wrong. Try garnishing with toasted pinenuts or pumpkin seeds.

Preparations

  1. Preheat your oven to 400°F.
  2. Toss the vegetables with enough oil (2-3 tablespoons) to coat them well. Spread them on two small trays or one large tray lined with foil or parchment paper.
  3. Roast the vegetables for 30-35 minutes, tossing occasionally, until tender and slightly browned.
  4. Transfer the vegetables to a high-speed blender. Add the vegetable broth (start with 2 cups, adding more as needed). Blend until you reach your desired consistency.
  5. Transfer the soup to a medium-sized pot and heat over low heat. Add the kale and cook until it’s soft and wilted.
  6. Serve hot, garnished as you like.

Tips

  • Store your soup safely by cooling it to room temperature within two hours, then place it in an airtight container and refrigerate for up to 3 to 4 days or freeze for up to 3 months.
