Inspiration

Everyone loves guacamole; ours has all the flavor, more protein, less fat, and fewer calories. Edamame for the win!

INCREDIBLY EDIBLE EDAMAME
Edamame has significantly more protein than avocado, with roughly 11 grams per half-cup of shelled beans compared to about 2 to 3 grams in a whole avocado. It also contains significantly less fat and fewer calories than avocado.

Ingredients

  • 12 oz, shelled, frozen edamame, defrosted
  • ½ medium-sized, ripe avocado
  • 4 garlic cloves, roughly chopped
  • 1 jalapeño pepper, roughly chopped
  • 1 ½ tbsp tamari (you can substitute soy sauce, but it will no longer be gluten-free)
  • ½ cup cilantro, leaves and small stems, chopped
  • ¼ cup tahini
  • 1 tsp toasted sesame oil; add more to taste
  • 1 large lime, zested and juiced
  • Sea salt to taste

TAMARI:
Tamari is a Japanese fermented soybean sauce that is typically gluten-free, richer, and less salty than traditional Chinese-style soy sauce. Tamari has a deeper, smoother, and more umami-forward taste with less harsh saltiness, and is slightly thicker, silkier, and darker than standard soy sauce. Soy sauce is typically made from roughly equal parts soybeans and wheat and has a sharper, saltier bite.

Preparations

  1. Add the ingredients to a food processor and blend or pulse until you reach your desired consistency.
  2. Season with salt to taste.

FOR MORE THAN NACHOS:
This edamame guacamole is perfect in lettuce and rice paper wraps, and great as a topper for baked sweet potatoes, salads, pastas, and tacos.

Tips

  • Store leftovers in an airtight container in the fridge for 7-10 days. The green color will fade, but it will still taste good.
