Inspiration

Salsa verde is a super easy and healthy way to notch up the flavor of any dish. It’s perfect with chips, topping a bowl, or as a marinade. It’s also easy to make from scratch. All you need are tomatillos, onion, jalapeño, garlic, lime, and cilantro.

Ingredients

  • 12 medium tomatillos, husked, halved
  • 1 medium white onion, halved
  • 1-2 jalapeños, halved and seeded, or whole if you like the heat!
  • Optional: 1 head of garlic, cloves removed from bulb, peel on
  • 2 limes, juiced
  • 1 cup cilantro
  • Salt to taste

Preparations

Char The Tomatillos

To make the salsa verde, you will need to cook the tomatillos, which you can do by either boiling them, broiling them in the oven, or pan-roasting them. We found broiling is the easiest, fool-proof method.

  1. Set the rack about 6” under the broiler, and set your oven to broil.
  2. Place the tomatillos and onion facedown on a baking sheet.
  3. Add the jalapeños and garlic if using.
  4. Broil for 5-8 minutes until nicely charred.

Blend The Salsa

  1. Add the broiled ingredients to the food processor.
  2. Add lime juice and cilantro.
  3. Blend until desired consistency is reached.
  4. Salt to taste.
  5. Cool and serve, freeze, or store in an airtight container in the refrigerator for up to 5 days.

GET EXPERIMENTAL:
This salsa is incredibly versatile, so get creative. Try adding a splash of champagne vinegar for acidity, or cumin for earthiness.

Tips

  • Add some chicken or vegetable stock to really set this sauce off!
