Spicy Mango Salsa

Ingredients

  • Mangos, cubed
  • Cherry tomatoes, diced
  • Cilantro, finely chopped
  • Shallot, finely minced
  • Thai red peppers, finely sliced
  • Olive oil
  • White vinegar
  • Pepper

Preparations

  1. Combine ingredients, oil and vinegar and mix well
  2. Sprinkle pepper to taste
  3. Refrigerate until use
  4. Optional: sprinkle toasted pumpkins seeds
