Inspiration

From the Provence region in France to your belly, this tantalizing tapenade is unbelieveable! Powerful, briny flavors and ample zing will keep you coming back and looking for new ways to enjoy this fantastic flavor combination, and trust us there are plenty: pizzas, salads, sandwiches – the list is endless. This recipe is perfect for vegans, being plant-based, and for those with shellfish allergies. But don’t worry – we have also made an option for those with no restrictions to their diets.

TAPENADE FACTS
Tapenade is named after the Provençal word for capers, tapenas. Over the years, olives have become the predominant ingredient.

TRADITIONAL TAPENADE
Traditional tapenade includes anchovies - add a tablespoon or two to the blender if you’re not vegan and don't have shellfish allergies.

Ingredients

  • 1 cup green olives, pitted (we love Castelvetrano olives)
  • ½ cup black olive, pitted (Niçoise, or Kalamata for extra briny flavor)
  • 2 cloves garlic
  • ¼ cup lightly packed fresh flat-leaf parsley
  • ¼ cup extra virgin olive oil 
  • 1 tbsp drained capers
  • 1 tbsp lemon juice

Preparations

  1. Combine all ingredients in a food processor.
  2. Pulse a couple of times, then scrape the sides of the jar to re-combine all the ingredients.
  3. Repeat until well chopped and blended and desired texture is reached – you don’t want to puree. 
  4. Serve, or cover in keep refrigerated.

PITTING OLIVES:
To pit olives with ease, place several olives on a cutting board, then press a sturdy, large frying pan or extra cutting board on top of them and move back and forth. Voila - now the olives should be broken into pieces allowing you to easily remove the pits.

Tips

  • You can hand chop the ingredients if you don;t have a food processor, it will just take more time.
  • Leftovers can be stored in the refrigerator for up to 2 weeks.
  • These ingredients aren’t the only things that can be put in. Add jalapenos for some heat, sundried tomatoes for extra flavor, or herbs like rosemary, basil or thyme for extra herbaceousness.
