Inspiration

This recipe is so good! Perfect as a snack, side or even dessert. The miso transforms the already incredible flavor of grilled pineapple to new heights, and the shichimi togarashi adds a little kick.

NUTRITIONAL BENEFITS OF MISO:
Miso is a superfood. Like other fermented foods, it contains probiotics to support a healthy digestive system. It also contains all the amino acids needed to make a complete protein source.

NUTRITIONAL BENEFITS OF PINEAPPLES:
Pineapples are a great source of antioxidants. They also contain digestive enzymes that contribute to good gut health and are packed with vitamins and minerals. Eating pineapple may also help boost immunity and lower your risk of cancer.

Ingredients

  • 1 pineapple, peeled, cored, cut into wedges
  • ¼ cup miso paste (I used white miso)
  • ½ cup of water
  • Scallions, to garnish
  • Shichimi togarashi, to garnish

MISO FACTS:
Miso paste comes in a variety of colors and flavors, the most commonly found include:
Shiro (white miso): The mildest in flavor and slightly sweet.
Aka (red miso): Strong and pungent with a deep color.
Shinshu (yellow miso): This miso takes the middle ground, and is very versatile.

Preparations

  1. Place pineapple wedges in a large ziplock bag.
  2. Mix soybean paste and water, add to pineapple and combine.
  3. Let marinate overnight in the fridge
  4. Remove from bag and grill over high heat until slightly charred.
  5. Garnish with scallions and shichimi togarashi and enjoy.

Tips

  • If you can’t find miso paste, you can always use soybean paste or doenjang. It has the same consistency and flavor but is a little saltier, so maybe cutback a bit.
  • You can store this to use later, but is best enjoyed hot off the grill.
