Inspiration

A popular snack in India, if you love popcorn, you’re going to love popped sorghum, or jowar dhani as it’s known locally. Sorghum is gluten-free, whole grain, and a good source of dietary fiber, iron, and various vitamins and minerals. It has the same nutty smell and light, fluffy texture as popped corn, but its tiny size is so adorable you’re going to want to incorporate this into all of your dishes.

Popped Sorghum

Ingredients

  • ⅓ cup sorghum
  • 2 tablespoons, medium-high, temperature tolerant oil (avocado or vegetable oil recommended)

  • Finishing sea salt, or your favorite seasoning blend.

Preparations

  1. Heat oil in a heavy stainless steel pot with lid over medium-high heat until hot (400-450°F).
  2. Add sorghum to pan, cover and shake often.
  3. Cook until popped. There should be no more than 10 seconds between pops, and the popped kernels should have a light, golden color, and nutty aroma.
  4. Remove from heat and transfer to a paper towel to absorb extra oil
  5. Store for later use, or sprinkle with sea salt, or your favorite seasoning blend and serve immediately.

Tips

  • Pay close attention to the popping. Sorghum burns quicker than popcorn because of its smaller size.
  • Pop the sorghum in batches to avoid burning.
  • Popped sorghum can be stored in an airtight container for up to a week.

This is the perfect garnish for a number of dishes, from soups, to salads, and even mains.
