Spicy Thai Basil Rice

Inspiration

Not only is this dish a real crowd pleaser, it can be tailored to meet any dietary restrictions. This spicy Thai rice dish is also best made with leftover rice, so get creative and use up your leftovers.

Spicy Thai Basil Rice

Ingredients

  • 4 cups, cooked, cooled, jasmine rice (I love using Uncle Ben’s Original™ Ready Rice™ Jasmine Rice)
  • 1 cup, steamed, green beans, chopped into 0.5″ long pieces
  • 2 cups finely, chopped baby bok choi (feel free to experiment with substituting any other Asian green)
  • Thai Marinade blend (see below)
  • 1-2 large shallots, finely diced
  • 1-4 green Thai chilis, finely sliced
  • One bunch, green onion
  • One bunch, Thai basil or sweet basil (Thai basil has a purple stem and stronger licorice flavor, sweet basil has a green stem, and a more peppery, clove flavor)
  • Optional Protein (see below)
  • Optional Eggs (see below)
  • Sambal oelek
  • 1-2 limes

Preparations

  1. Heat sesame oil in large pan (learn more about Choosing The Right Oil)
  2. Add marinade, shallots and chilis. Cook for another minute or two
  3. Add cold jasmine rice, cook a few minutes until warmed throughout
  4. Add protein of choice (make sure to reserve any remaining juices to add at this point), egg if desired, sambal oelek to flavor, and continue cooking until heated throughout. Mix thoroughly.
  5. Add steamed green beans and baby bok choy (or substitute), cooking until heated throughout
  6. Add sliced green onion, finely diced Thai basil and cook for a minute or two

Serving

  1. Serve to plates
  2. Add lime juice
  3. Optional: Sprinkle with Nasi Goreng seasoning
  4. Serve with sambal oelek on the side

Spicy Thai Marinade

Busy lives often mean shortcuts need to be taken. Thankfully, this is one shortcut I wholeheartedly recommend. It can make authentic Thai-flavored soups, salads, rices and noodles dishes in a pinch. See below for link to retailer.

Marinade

  • Gourmet Garden™ Thai Seasoning Paste (2 oz) (see below) or substitute, a puree of:
    • 2″ ginger
    • 2 stalks lemongrass, ends removed, finely chopped
    • 1 cup, rinsed, chopped cilantro
    • 2 cloves garlic
    • 2 green Thai chili
    • juice of 1 lime
    • pinch of sea salt
    • canola oil to reach desired texture
  • 1-4 finely chopped green Thai chilis
  • Sesame oil (1/4c)
  • Dark soy sauce (1/4c)
  • Optional: 1 tbs dried ginger

Protein Options

Various proteins sources can be added to meet your dietary needs. Pick and choose however many of the below options to make your dish special.

Vegan: Tofu

  • 1-2 cups extra firm tofu
  • Squeeze out ass moisture as possible
  • Coat tofu with marinade (see above)
  • Spread an even layer across a baking sheet, and sprinkle with corn starch
  • Bake until golden brown, about 25 to 30 minutes.

Vegetarian: Eggs

  • Whisk 2 eggs
  • Heat sesame oil in pan, over medium/high heat
  • Add diced shallots, finely diced green Thai chili, finely chopped green onion
  • Once browned add egg and cook, stirring constantly
  • Once done, set aside

Animal Protein: Shrimp

  • 12 medium shrimp
  • Marinate shrimp for 3 hours, covered in fridge (see above)
  • Heat oil in frying pan
  • Cook shrimp over high heat until cooked
  • Set aside to cool, reserving additional liquid for heating in pan to fry rice

Animal Protein: Chicken

  • 12 chicken thighs
  • Marinate chicken for 3 hours, covered in fridge (see above)
  • Bake chicken at 400 for 35 to 40 minutes
  • Reserve liquid for heating in pan to fry rice
