Spicy Tomato Chutney

Inspiration

Looking for something uniquely spicy, delicious, aromatic and fresh? Look no further than our spicy tomato chutney.

Ingredients

  • 2 tbsp sesame oil
  • 5 cloves garlic, coarsely chopped
  • 1″ piece of ginger, coarsely chopped
  • ½ red chili, coarsely chopped
  • 5 cardamom seeds, crushed
  • 2 tbsp red pepper flakes
  • ¼ cup sesame seeds
  • 1 cup chopped red onion
  • 14 oz canned diced tomato
  • 2 tbsp soy sauce
  • ¼ cup freshly squeezed lemon juice
  • 1 cup water
  • Small bunch of cilantro
  • Sea salt

DELECTABLE SHRIMP:
Try this chutney as a topping to grilled shrimp!

Preparations

  1. Heat the oil in a saucepan over medium heat. Add the garlic, ginger, chili and cardamom, and cook until fragrant and starting to brown, about 4 minutes. 
  2. Add the sesame seeds and red pepper flakes and let toast for 1 minute (add more oil if needed).
  3. Add the onion to the skillet and sauté until soft (about 5 minutes).
  4. Add the canned tomatoes and continue to cook until soft and juicy (about 5 minutes).
  5. Transfer the mixture to a blender, add the soy sauce, lemon juice, and water and pulse until a coarse texture is reached. Add salt to taste if desired. 
  6. Use immediately or transfer to a clean, airtight jar and store it in the refrigerator, where it will keep for up to 5 days.

Tips

  • The flavors will develop and improve over time.
  • Can’t find cardamom seeds? Substitute the seeds for a ¼ teaspoon of ground cardamom.
