Roasted Vegetable Soup

Inspiration

An absolute beauty! This delicious, spicy, plant-based soup will warm your soul from the inside and scorch your tongue on the outside.

Ingredients

  • 2 butternut squash, peeled, halved, seeds removed
  • 1-2 red onions, peeld, cut into quarters
  • 1 shallot, peeled, halved
  • 1-2 cups, Homemade Applesauce, or 1-2 apples, cored, quartered
  • Handful, cherry tomatoes
  • ⅓ cup of pumpkin seeds, raw or toasted
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • Thai basil, handful
  • Ras el-hanout (I use 2-3 tablespoons for rich, deep flavors)
  • Olive oil (I use Baklouti Green Chili Olive Oil for an extra kick)
  • Pepper Pot, Caribbean habanero hot sauce to taste
  • Vegetable stock, 1-2 900ml packages

TIME SAVER:
If using a Vitamix - you can leave the peels on the butternut squash when roasting and blending.

Preparation

  1. Preheat the oven to 425°F.
  2. Combine vegetables in a glass baking dish, then add apples or applesauce, and pepperpot.
  3. Pour oil over ingredients and sprinkle with salt, pepper, pumpkin seeds, and ras el-hanout.
  4. Roast in the oven until everything is cooked through.
  5. Transfer the contents to a blender in batches, adding stock and blending until smooth and desired consistency is reached.
  6. Transfer to pot to rewarm and combine batches.
  7. Store or serve immediately, garnishing with optional pumpkin seeds, thai basil, and pepper pot (if you dare).

Tips

  • This soup can be made to your liking – thick and hearty like a puree, or thinner, simply by adding extra stock during the blending process.
  • When storing – it’s best to use any remaining soup stored in the refrigerator with 3-4 days, and any frozen within 6 months.
  • To know exactly what’s going in my soup I like to use homemade applesauce.
