Forget animal style. Here’s a spin on a summer classic – veggie style.

THE HEALTHIER CHOICE:
Veggie burgers offer several health benefits compared to traditional meat-based burgers, including being lower in calories and saturated fat, a good source of fiber, vitamins, and minerals. They are also more environmentally friendly as they have a lower environmental impact, requiring less land, water, and energy to produce. Additionally, unlike some store-bought veggie burgers, you know exactly what’s in these, allowing you to avoid unhealthy ingredients like processed soy, artificial flavors, and added sugars. If that wasn’t enough reason to try this recipe, plant-based diets are often associated with a lower risk of heart disease, type 2 diabetes, and some types of cancer.

Ingredients

  • 1 medium sweet potato, cooked and mashed (about 1 cup)
  • 1 cup finely chopped spinach (or kale)
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup rolled oats (whole or pulsed into oat flour)
  • 1 small onion, finely chopped
  • 1 cup grated carrot
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Salt and pepper to taste
  • Optional: 1 tbsp olive oil (for richness)
  • Optional: flax egg (1 tbsp ground flax + 3 tbsp water)

Preparations

Prepare Vegetables

  1. Cook the Sweet Potato: Roast, steam, or microwave until soft. Let cool slightly.
  2. Mash Sweet Potato and Black Beans: In a large bowl, scoop out the sweet potato, add the black beans, and mash with a fork or potato masher until they are mostly smooth, with some chunks remaining for texture.
  3. Prepare Vegetables: Add the carrots, spinach, or onions to the large bowl (sauté briefly if you prefer softer vegetables). Add remaining ingredients (oats, garlic, spices, salt, and pepper), and mix well.
  4. Let Mixture Firm: Let the mixture sit for 5–10 minutes, allowing it to firm up and the oats to absorb any excess moisture. If the mixture is too wet, add a bit more oats. If the mixture is too dry, add a splash of water or a flax egg.

Form Patties

  1. Form Patties: Using your hands, form 4–6 patties about 1/2 inch thick.

Cooking Methods

  1. Air-Fryer: Preheat your air fryer to 390°F (200°C). Spray the basket with cooking spray. Place one or two veggie patties in the air fryer basket. Air fry for 4-6 minutes. Flip the burgers and cook for 4-6 minutes more, or until golden brown, heated through, and firm.
  2. Bake: Place on a parchment-lined baking sheet and bake at 375°F (190°C) for 20–25 minutes, flipping it halfway through, until golden brown, heated through, and firm to the touch.
  3. Pan-fry: Heat a nonstick or lightly oiled pan over medium heat. Cook patties 3–5 minutes per side until golden brown, heated through, and firm.

AIR FRYER FOR THE WIN:
For the best results, use an air fryer. The patties will be crispy while using minimal oil.

Serve It Up

  1. Serve: Serve on a whole grain bun, in a lettuce wrap, as part of a salad bowl, or with a side of roasted vegetables.
  2. Top: Top with your favorite plant-based condiments, such as avocado, sliced tomato, red onion, arugula, tahini sauce, or a spicy hummus.

Tips

  • To Freeze: Lay the uncooked patties on a tray, then freeze until solid. Store them in a freezer bag for up to 3 months.
