Inspiration

A fantastic Mediterranean inspired dish, this one is sure to please, my wife will be the first one to tell you. Not light-handed with the olives, castelvetrano are the main star in this version, but any mix of olives will do. The grouper, hands down my favorite fish, is the other star here, but could easily be substituted for any firm, white fish, such as sea bass, snapper or mahi mahi.

Olive Oil Poached Mediterranean Grouper

Ingredients

  • 1 Filet of white grouper
  • 1 Red onion
  • Cherry tomatoes, handfull
  • Olives, Castelvetrano, and assorted
  • Olive tapenade
  • Pine nuts
  • Ras El Hanout seasoning mix (see below)
  • Olive oil

Preparations

  1. Preheat oven to 375° degrees.
  2. Place filet in oven-safe glass baking dish.
  3. Sprinkle ras el hanout seasoning liberally over grouper.
  4. Add onions, olives, tapenade and pine nuts.
  5. Fill baking dish with olive oil until fish is covered by one inch.
  6. Place in oven for approximately 30 mins.
