Inspiration

I love ceviche! I have fantastic memories of the time I spent in Peru as a teenager, and the culinary experience has never left me. Without question – the emblematic dish of Peru has to be ceviche – a delicious, light and refreshing mixture of raw fish, cold-cooked in lime juice, usually served with red onions and canchita (Peruvian toasted corn) – of course some spice is always nice.

TASTY, HEALTHY CEVICHE:
Ceviche is naturally high in protein, low in fat, and packed with vitamin C from the lime juice. It is also gluten-free and diabetic friendly.

Ingredients

  • 1 pound sea bass filets, cut into 1/2-inch pieces
  • ½ red onion, very thinly sliced
  • 3 limes, juiced
  • 1 tbsp seeded, chopped Rocoto hot pepper
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • ½ cup fresh cilantro leaves
  • Canchita (Peruvian toasted corn), finely chopped – you may know them as corn nuts

ESSENTIAL INGREDIENTS FOR CEVICHE:
Known as the godfather of ceviche, Javier Wong - featured on shows such as Anthony Bourdain’s Parts Unknown - once said: “ceviche only needs five ingredients: Fish, Lime, Salt, Pepper and love.” So experiment, and always use whatever seafood is the freshest.

Preparations

  1. In a large mixing bow, add the fish with the onion, lime juice, and rocoto.
  2. Season with salt and pepper.
  3. Toss gently to combine, making sure to coat the fish with the lime juice.
  4. Cover and refrigerate for 25 to 30 min
  5. Serve cold, garnished with canchita.

Tips

  • Can’t find canchita? Try toasted pistachios or cashews instead.
  • Try adding some diced tomatoes and avocado and serve with toasted corn, plantain or yucca chips.
  • Experiment with different types of seafood, just get the absolute freshest.
