Inspiration

I was in Costa Rica with my wife, visiting her family, and had the opportunity to go deep-sea fishing. We landed a beautiful yellowfin tuna, and her father made this incredible tartare that night. You can add your touch, but this was sublime.

Ingredients

  • Yellowfin tuna, 2 cups cubed
  • Mango, 2 cups cubed
  • Avocado, 2 cups cubed (about 3 medium avocados)
  • 1 cup chopped cilantro, halved
  • 1/2 cup chopped green onions (only the green parts)
  • 2 tbsp sriracha
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • Sesame seeds
  • Juice of 2 limes

Preparations

  1. Prepare the Tuna: Combine tuna, sesame oil, soy sauce, sesame seeds, sriracha, and lime juice.
  2. Prepare the Advocado: Combine avocado and half the cilantro.
  3. Prepare the Mango: Combine the mango and remaining cilantro.
  4. Assemble the Tartare:
    • Using a ring mold, layer the following items in order: avocado, mango, tuna
    • Pat down in ring mold.
    • Place in fridge to chill for an hour or two.
  5. Serve: Remove the ring and serve with corn nachos or plantain chips.

Tips

  • If you don’t have ring molds, you can get creative; my father-in-law used a PVC pipe when he started making this recipe, but round cookie cutters will do the trick.
  • We used sriracha, but you can use any hot sauce.
