Inspiration

You may have tried my recipe for Ponzu Sesame Salmon, but this new creation is incredible. The gochujang imparts a beautiful red color to the salmon, and the flavor combination of savory, sweet, and spicy is truly divine. Trust me – break out this recipe when you have guests. As a bonus, wild salmon is high in omega-3s, which are beneficial to heart and brain health, and are also a cancer-fighting superfood.

Ingredients

  • 4 ½ pound (8oz) Wild Atlantic salmon fillets
  • ½ cup green onions, ends trimmed, diced into thin rings, portioned in half
  • ¼ cup pure sesame oil
  • ¼ cup gochujang paste
  • 2 tbsp ponzu
  • 2 tbsp dark soy
  • 2 tbsp sesame seeds (I use black sesame seeds for a more dramatic presentation)

WILD OR FARMED?
While often cheaper and larger than its wild relatives, environmental and dietary differences mean farmed salmon usually contains more potentially harmful, and even carcinogenic, contaminants than wild salmon.

Preparations

Marinating The Salmon

  • Combine all the ingredients in a zip-lock bag and marinate for up to an hour. Make sure to leave the extra portion of green onion for garnish.

Cooking The Salmon

  • Preheat oven to 375°F.
  • Remove the salmon and place it into an oven-safe pan, making sure they are not touching.
  • Cook for 15 minutes (or until your desired cook is reached).

Serving

  1. Plate the salmon and top with the remaining diced green onion.
  2. Serve immediately.

Salmon is rich in omega-3 fatty acids (EPA and DHA) and potassium, which significantly contribute to heart health by reducing artery inflammation, lowering cholesterol levels, and maintaining healthy blood pressure levels.

BRAIN-HEALTH FACTS:
Omega-3 (particularly DHA) works in conjunction with vitamins A and D, as well as selenium, to help boost and improve brain function. Omega-3 fatty acid supplements are also used to treat Alzheimer’s and Parkinson’s disease.

CANCER-FIGHTING FACTS:
Omega-3 fatty acids have a profound effect on cancer cells and can help kill tumors. Certain cancers, including skin cancer, prostate cancer, colorectal cancer, liver cancer, and brain tumors, may be treated and prevented with omega-3 fatty acids.

GOCHUJANG FACTS:
Gochujang offers health benefits, including anti-inflammatory and antioxidant properties, which contribute to a healthy gut and blood sugar regulation. Studies also suggest that gochujang may exhibit anti-cancer and anti-metastatic activities.

Tips

  • You can marinate the salmon for up to an hour, but any longer and the fish will get mushy.
