Inspiration

This Mediterranean-inspired cod recipe is as beautiful as it is tasty. For an extra kick, try topping with Aleppo pepper flakes.

Ingredients

  • Cod Loin (1 pound) *I used wild-caught Icelandic Cod
  • Kalamata olives
  • Pistachios
  • 2 tbsp olive oil
  • Sea salt
  • Pepper
  • Golden oyster mushrooms (150 grams or a few small clumps) 
  • 4 brown turkey figs, halved (brown turkey and mission varieties work best)
  • 1 lemon

Cod is a nutritious fish that can be part of a healthy diet. It's a good source of protein, vitamins, minerals, and omega-3 fatty acids, and low in calories and fat. Some other health benefits of cod include heart and bone health and cognitive, thyroid, and red blood cell formation support.

The Marine Stewardship Council (MSC) supports the Icelandic cod fishery for its responsible and sustainable fishing methods.

Preparations

  1. Prepare the Oven: Heat oven to 400°.
  2. Dry the Cod: Lay the fish out and sprinkle with salt. Let stand for 15 minutes. Pat dry with a paper towel.
  3. Prepare the Pan: Arrange all ingredients in a heavy, ridged cast iron pan. Drizzle with oil.
  4. Roast: Place the cast iron pan in the oven for 20 minutes or until done.
  5. Serve: Remove from oven and top with zest of one lemon.
  6. Enjoy!

Tips

  • Ensure your cod is dry to prevent excess water from escaping while roasting and browning your mushrooms.
