These three-ingredient oatmeal cottage cheese pancakes are unbelievably tasty, healthy, and easy to make, and they will win over even the biggest skeptics. They’re also high in protein and perfect for meal prepping.

Ingredients

  • Equal parts oats to cottage cheese.
    • 1 cup whole oats
    • 1 cup low-fat cottage cheese
  • 2 cups of eggs white (you can also use two large eggs)

Egg whites provide a concentrated source of complete, high-quality protein that is virtually fat-free and low in calories. They contain all nine essential amino acids, making them perfect for muscle repair, maintenance, and growth. Additionally, egg whites are suitable for weight management and reducing cholesterol intake since all the cholesterol and saturated fat are found in the yolk.

Preparations

  1. Place all ingredients into a blender and blend until oats are broken down.
  2. Heat a nonstick pan over medium heat and cook the pancakes in batches until they’re deep golden-brown and the edges are set.
  3. Serve warm as is, or with your favorite topping.

Tips

  • If you’re meal prepping for the week, these will keep in a sealed, airtight container in your fridge for 4-5 days. You can reheat them in the microwave or pan, but for the crispiest results, use your air fryer for 3–5 minutes!
