This show-stopper has everything: umami from the caramelized leeks, tang from the goat cheese, crispy phyllo, and the oh so tantalizing Moroccan twist.

Served hot from the oven, topped with mushrooms, toasted pine nuts, and fresh goat cheese, this dish won’t be forgotten.

LEEK HEALTH BENEFITS:
Leeks offer a range of health benefits, including heart health, brain health, digestion, and immune system support. They are rich in vitamins A, C, and K, fiber, folate, and antioxidants. Leeks are also a good source of vitamin B6, which helps to reduce the risk of heart disease, blood clots, and stroke.

Ingredients

  • 1 package phyllo pastry, ~400 grams
  • 6 medium leeks
  • 1 cup mushrooms, diced (I used a mixture of black oyster and chestnut mushrooms)
  • 2 tbsp pine nuts, toasted
  • 2 tbsp fresh goat cheese
  • 2 tbsp butter, divided into three equal portions.
  • 2 tbsp honey (I used manuka honey for a rich, dark caramelization)
  • 1 tsp ras el hanout, halved
RAS EL HANOUT:
Ras El Hanout is a North African spice blend of the best spices the seller offers.

Preparations

Get Prepared

  1. Thaw phyllo pastry (allow 1 hour if refrigerated, 4 hours if frozen).
  2. Prepare leeks: Remove roots and dark green tops, cut lengthwise, rinse, pat dry, and set aside.
  3. Prepare mushrooms: Remove stems if desired, and chop into small pieces.
  4. Toast pine nuts in a medium-sized cast-iron skillet over medium heat on the stove, and set aside.
  5. Preheat oven to 400°F.

Cooking

  1. Add a portion of butter to the skillet, add the mushrooms and ras al hanout, and cook on the stove over medium-high heat until tender and browned, about 5 minutes. Remove the mushrooms and set aside.
  2. Add a portion of the butter and the honey to the skillet and swirl to cover the cooking surface. Place the leeks, cut sides down, completely covering the cooking surface, and cook over medium heat until the leeks caramelize, about 8-10 minutes.
  3. Drape a few sheets of phyllo pastry over the leeks and secure with a fork. Brush the top layer with the remaining butter.
  4. Place the cast-iron skillet in the oven and bake for 8-10 minutes until the phyllo is crispy and golden.

Assemble

  1. Once the pastry is ready, remove the skillet from the stove and flip the tart onto a serving tray. 
  2. Top with pine nuts, mushrooms, goat cheese, and ras el hanout.
  3. Serve immediately.

Tips

  • This recipe can easily be tailored to parties. Add the mushrooms to the caramelized leeks and spoon the mixture into individual ramekins. Cut the phyllo to size and place it over each ramekin. Bake, top with pine nuts and goat cheese, and there you go: personal tarts.
