This dish brings back memories of picnics and summer barbeques. But it’s not your mom’s potato salad – it’s got an addictive twist and a touch of heat! It can also be made ahead of time, with the flavors only improving when left in the fridge overnight.

TANTALIZING CHILI CRISP:
Chili crisp is having it’s time in the limelight, with celebrity chefs like David Chang of Momofuku fame even offering their own take on the delicious, spicy, umami and versatile condiment made from chili peppers, oil, and other ingredients like garlic, onion, and peppercorns.

Ingredients

  • 8 small to medium-sized, red potatoes, quartered
  • 5 eggs, hard-boiled.
  • ¼ cup mayonnaise, or plant-based substitute
  • 3 tablespoons chili crisp
  • Sea salt, to garnish
  • Freshly cracked black pepper, to garnish
  • Chives, to garnish

PERFECT HARD BOILED EGGS:

  1. Place the eggs in a pot and cover them with cold water by 1 inch.
  2. Bring the water to a boil over high heat.
  3. As soon as the water begins to boil, turn off the heat and cover the pot. Leave the eggs in the hot water for 10 minutes.
  4. Transfer the eggs to a large bowl of ice water to stop the cooking process, leaving them for at least 15 minutes before peeling.

Preparations

  1. Hard boil eggs and set aside.
  2. Boil potatoes until soft when pierced with a fork. Drain and set aside until cool.
  3. Peel eggs and chop. You can remove some or all of the yolks if you’re watching your cholesterol intake.
  4. Add eggs, potatoes, mayonnaise and chili crisp to a bowl and combine gently.
  5. Salt and pepper to taste, combining once more.
  6. Place in a fridge until you are ready to eat.
  7. Sprinkle with freshly diced chives and serve.

Tips

  • This potato salad is so good there’s no need to relegate to the role of sidekick – it’s more than capable of being the main star of your meal.
  • We like to remove some of the yolks before chopping up the hard-boiled eggs to limit the cholesterol.
