Inspiration

Here’s a fantastic Mediterranean-inspired salad that’s easy to prepare, light, healthy, and, best of all, irresistibly delicious.

Ingredients

Salad Mixture

  • 1 English cucumber, thinly sliced
  • 1 cup cherry tomatoes, quartered
  • 1 cup radicchio, sliced 
  • ½ cup chickpeas, rinsed
  • ½ cup yellow pepper, cubed 
  • ½ cup red onion, finely sliced

Dressing

  • ⅓ cup plant-based Greek yogurt
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp Champagne or red wine vinegar
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Toppings

  • Toasted pine nuts
  • Microgreens (I used radish and amaranth microgreens)
  • Dill (I didn’t use any in the picture, but it makes a great addition to the salad)

AMAZING AMARANTH:
Amaranth is an excellent microgreen! They are rich in Vitamin K, Vitamin C, and iron, which are crucial for blood clotting, immune function, and red blood cell production. They also contain protein, which is essential for tissue repair. Other health benefits include enhanced immune function, improved bone health, and better digestion due to high fiber content.

Preparations

  1. Combine dressing ingredients in a bowl and whisk together.
  2. Add salad ingredients and mix well.
  3. Plate and add toppings.

Tips

  • If you want extra protein, try adding hemp seeds, a nutritious plant-based protein source that provides many health benefits, including digestion support and heart health.

GLUTEN-FREE TIP:
While hemp seeds are naturally gluten-free, they can be cross-contaminated in growing and processing. If you have celiac disease, ensure your brand is certified gluten-free.
