Here’s a delicious salad that’s incredibly healthy, quick, and easy to make!

SUPER FRUITS:
Currants and plums have been shown to reduce the incidence of several diseases, including hypertension, cardiovascular disease, osteoporosis, diabetes, cancer, and inflammatory diseases.

Ingredients

Salad Mixture

  • 6 cups shredded reg and green cabbage, Brussels sprouts, and kale
  • 1 cup fresh red currants
  • 1 cup chopped plums – I used small sugar plums to create the recipe pictured above.

TIME SAVER:
Most grocery stores carry ready-made coleslaw mixes next to prepared salad mixes. Alternatively, you can grate your cabbage, kale, carrots, cauliflower, and whatever ingredients you use directly into the bowl.

Dressing

  • 3 tsp Dijon mustard
  • 4 tbsp olive oil

Toppings

  • Balsamic glaze
  • Optional: Toasted pumpkin seeds or any nuts or seeds you have.

Preparations

  1. Combine shredded salad base, currants, and plums in a bowl.
  2. Combine dressing ingredients and toss well.
  3. Drizzle with balsamic glaze and top with toasted pumpkin seeds.

Tips

  • Feel free to use any seeds or nuts you like; they’re gluten-free!
