Korean Dumplings

Korean mandu dumplings.

Inspiration

I have always loved dumplings, but had never prepared them myself. Let me tell you, not only was it incredibly quick and delicious, it was so easy my six-year-old son took the lead.

Ingredients

Dipping Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons water
  • 1 tablespoon sugar (optional)

Dumplings

  • 2 cloves garlic
  • 1-inch piece ginger, fresh
  • 3 green onions
  • 1 carrot
  • 4 ounces extra firm tofu
  • ½ pound lean ground meat (pork, chicken, or beef)
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 package dumpling wrappers (gyoza or wonton)
  • 1 head of lettuce

is a miracle food. Not only does it help boost your immune system, it can reduce high blood pressure, lower bad cholesterol levels, has antibiotic properties, can help prevent cancers, and may even help with the prevention of Alzheimer's and Dementia.

GINGER
is excellent for your digestive system and is a powerful immunity booster. It is also a known antimicrobial, and great for treating inflammation.

Tools

I normally don’t list the tools required for recipes, however this one needs some special tools, so review the list below to make sure you have what you need:

  • 2 Small bowls
  • 1 Large bowl
  • Measuring spoons
  • Whisk
  • Cutting board
  • Knife
  • Grater/Zester
  • Dumpling press
  • Steamer
  • Large pot with lid

Preparations

Dipping Sauce

  1. Combine soy sauce, rice vinegar, water and sugar. Whisk.

Dumpling Filling

  1. Peel garlic, mince, add to a large bowl.
  2. Peel ginger, grate, add to garlic.
  3. Peel carrot, grate, add to garlic and ginger.
  4. Remove root end from green onions, dice remainder, add to garlic, ginger and carrot.
  5. Crumble tofu and add along with ground meat, sesame oil, soy sauce to a large bowl. Mix by hand.

Stuffing the Dumplings

  1. Center one dumpling wrapper on press. Dip your finger in water and trace a circle around the edges of the wrapper.
  2. Place one tablespoon of filling into the center of the wrapper.
  3. Push both sides of the dumpling press together tightly to seal, then remove dumpling.

Cooking the Dumplings

  1. Bring a few inches of water to a boil over medium heat. 
  2. Line the steamer basket with lettuce to prevent sticking.
  3. Add dumplings to the steamer, making sure not to overlap.
  4. Add steamer to pot, cover and steam for 10 minutes.
  5. Optional: To add extra depth of color, flavor and texture, transfer dumplings to a hot pan with neutral-flavored oil and cook for about a minute, or until desired color is achieved.

Serving

  1. Serve immediately with the prepared dipping sauce.

Tips

  • This recipe will prepare roughly 30 dumplings, so you’ll need to prepare and steam roughly 3 batches of 10 dumplings each.
  • For a simple plant-based alternative, replace the ground meat with finely chopped cabbage and mung bean sprouts.
  • If not cooking right away, freeze the dumplings on the baking sheet, making sure none of them are touching to prevent sticking together. Once frozen solid, portion the dumplings into freezer containers and freeze for up to three months.
  • Try adding some gochujang to your dipping sauce for some extra kick – a spicy, fermented, red chilli paste popular in Korean cooking.
