Inspiration

You may have noticed fresh figs in your local grocery store – they’re not only a delicious, nutrient-packed, low-calorie snack, they also offer a variety of potential health benefits. Figs – and their leaves – may promote healthy digestion, decrease your risk of heart disease, and help manage your blood sugar levels, actually lowering the amount of insulin required by the body in diabetics.

Ingredients

Salad

I find the extra time and care you put into chopping, slicing and dicing your ingredients really makes the salad shine, as each mouthful has the right amount of each ingredient. Nothing throws off a great salad quicker than a large bite of onion. Also, the below is more of a guideline, experimentation often leads to wonderful, unexpected and delicious results, so be creative and have fun.

  • 2 cups mixed baby greens (any greens will do really)
  • 1-2 shallots, finely diced
  • 1-2 avocados, cut into ½“ cubes
  • 4-6 mission figs, finely sliced
  • 3″-4” long piece of cucumber, finely diced
  • 1 cup micro greens
  • ½ cup sprouts
  • ½ cup cherry tomatoes, finely sliced
  • Finishing salt

Dressing

Again the below is more of a recommendation. I like to swap out the champagne vinegar for equal parts of a delicious grapefruit-infused white balsamic vinegar I have – the key being keeping equal parts sweet and acidic.

  • 1-2 tablespoons of avocado or grapeseed oil
  • 1 tablespoon of champagne vinegar
  • Optional: 1 tablespoon manuka honey
  • Optional: 1-2 tablespoons of citrus juice

While fresh figs make for a great low calorie snack, watch your portions when eating dried figs - as figs dry, their sugar and caloric content concentrates, while the size of the fruit decreases.

Figs are particularly rich in copper and vitamin B6:
Copper is a vital mineral that’s involved in metabolism and energy production, and the formation of blood cells, connective tissues, and neurotransmitters. Dried figs have a greater copper content than the fresh variety.
Vitamin B6 is an essential vitamin to helping your body break down dietary protein and create new proteins. Like copper, it also plays an important role in brain health.

Preparations

  1. Prepare the dressing by combining all ingredients.
  2. Prepare the salad by combining all ingredients.
  3. Add dressing just before serving.
  4. Garnish with finishing salt.

Tips

  • For the best results, store your ripe, fresh figs in the fridge on a plate, lined with paper towel and covered with plastic wrap for up to three days.
  • Dried figs make for a great, easy to store, energy boosting, on-the-go snack!
