Looking for a crowd pleasing main dish? Look no further than this delicious cranberry and pistachio rack of lamb.

Ingredients

  • Rack of lamb
  • Garlic, ¼ bulb, finely diced
  • Pistachios, ⅓ cup, finely diced
  • Dried cranberries, ¼ cup
  • Olives, finely diced, preferably Castelvetrano
  • Olive oil
  • Balsamic vinegar
  • Freshly cracked black pepper
  • Sea salt
  • Lemon zest

Garlic belongs to the Allium family of vegetables, which includes onions, scallions, shallots, leeks and chives. Garlic also strengthens the immune system, helping the body fight diseases such as cancer.

Preparations

  1. Finely dice the pistachios, olives and garlic – or crush the garlic using a press.
  2. Spread ingredients over the rack of lamb, and apply olive oil liberally.
  3. Top with dried cranberries and lemon zest.
  4. Season with salt and pepper.
  5. Drizzle balsamic vinegar over rack.
  6. Roast lamb in preheated oven at 450°F in upper third of oven for 25 minutes.
  7. Transfer racks to carving board and let stand for 10 minutes before serving.

Tips

  • You can season the meat 1 to 3 days before roasting. Just make sure to keep it in an airtight zip-top bag in the fridge and bring it out 1.5 to 2 hours before roasting to ensure it reaches room temperature before cooking.
