ICELANDIC COD
Sweet, lean and flaky, wild-caught Icelandic cod is among the healthiest fish in the sea. It is an excellent source of protein, low in calories and rich in omega-3 fatty acids that support heart and brain health. It’s also sweeter than Pacific cod, thanks to its diet of shellfish, crustaceans and small fish.

  • Sesame seeds (2 tbsp)
  • Zest of 1 lemon
  • Edible flowers – ok these are not necessary at all, but really turn the visuals up to 11!

Preparations

  1. Prepare Plant-Based Japchae and set aside to cool – the contrast between the hot fish and the cool noodles is part of the magic to this meal.
  2. Sprinkle Herb and Aleppo Seafood Seasoning over both sides of the Icelandic cod filets.
  3. Heat canola oil in frying pan on med-high heat.
  4. Add cod and cook for 2-3 minutes per side or until desired cook is reached.
  5. Remove from pan, immediately plate on top of cooled Japchae, garnish and serve.

Tips

  • While firm, cod is a fairly delicate, flakey fish, especially when cut thin, so you will want to touch it as little as possible during cooking and flipping.
  • Try garnishing with green onions and toasted pine nuts.
  • The Japchae is only a suggestion as the Icelandic cod is superb, perfectly complimenting whatever you serve with it, whether vegetables, pasta or a starch.
